Feta & Lime Hint Gnocchi

Whenever I’m hungry, too hungry to cook anything that takes too long, I always throw together a bowl of pasta. The only real time you spend cooking with a lot of pasta recipes, at least of mine, is how long it takes to boil the pasta. Then, all you need to do is throw in a few ingredients, like prosciutto and feta, and you have a meal. Gnocchi is something I often crave, and its known to be at its best once it’s cooked enough to float. If you have a gnocchi obsession like I do, all you need is to perfectly cook it, add a little bit of lime juice, and throw a couple more ingredients in the bowl. Again, cook time depends on how long you boil your gnocchi. Other than that, it’s perfect for the starving tummy and the starving soul.

Ingredients:
1/2 package of gnocchi
1/2 large lime, for juice
1/8 cup evoo
Pinch iodized salt
2 slices prosciutto, shredded by hand
1/4 cup feta, cubed
Directions:
Boil a pot of water. Add the gnocchi. Stir every forty-five seconds or so. Strain once the gnocchi are floating to the top. Add to a bowl for one person, unless feeding more than just yourself, in which case, double or triple this recipe. Squeeze the lime juice over the gnocchi. Drizzle in the evoo. Pinch in the salt. Toss with a fork, until you’re sure everything is coated. Toss in the cubed feta, and fold in with the fork. Shred in the prosciutto.
Serving Suggestions:
Pino noir, wheat beer, lemon water.
