Cucumber & Apple Salad

I’ve never seen apples and cucumbers utilized like this before, nor have I seen them together as main ingredients as much as I’d like. This salad is simple, has two different types of crunch, and has both brightness from the apples and lime juice, and a freshness from the cucumbers. This recipe is a great side salad for most dishes, including roast pork or a good risotto, and is easy enough to make in the fifteen minutes while you’re waiting for your main meal to come together. I hope you enjoy this recipe as much as I enjoyed developing it!

Ingredients:


1 Granny Smith apple

1/2 cucumber

1/2 lime, for juice

1/4 cup alfalfa sprouts

1 pinch chia seeds



Directions:


Core and chop the apple. Add to small-medium mixing bowl. Squeeze one half of the lime over the apple chunks, and toss the apple in its juice.


Chop the cucumber in half. Shave it with a vegetable peeler. Slice into skinny rounds. Add to the bowl with the apple, and toss.


Add to small serving plate. There should be enough for two or three small side salads. Sprinkle chia seeds over the salad. Pull apart alfalfa sprouts, and scatter over salad.



Serving Suggestions:


Chardonnay, cucumber-lime water, lemonade.
