Feta, Lime, & Chia Avocado

Avocados are one of my favorite gifts from the earth. Whenever they look good at the store, I always need to pick up at least one, and sometimes two. They’re a versatile ingredient, and all you need are a few toppings to make it into a full meal. Here, I use a briny feta, lime juice, and a few other items to create something beautiful. If you like salty and bright, I hope you love this avocado recipe as much as I loved developing it.

Ingredients:
1 ripe avocado, halved and pitted
4 tablespoons crumbled feta, divided
2 teaspoons chia seeds, divided
1/2 lime, for fresh lime juice
Freshly cracked black pepper
Drizzle extra-virgin olive oil.
Directions:
Crumble two tablespoons of feta over each of the avocado halves, two per half. Squeeze the lime juice over the halves. Sprinkle a teaspoon of chia seeds over each avocado half, one per half. Crack over fresh black pepper. Drizzle over the evoo.
Serving Suggestions:
Brut champagne, cucumber water, apple cider.
