Lemon & Pomegranate Toast

Ever need to make something that’s so ridiculously easy that you can make it at any time of any day because your day was way, way, way too long and way, way way too stressful? Who wants to cook after they’ve spent hours at work? For me, cooking and preparing meals always puts me in a much better mood, but sometimes, even I have struggles going into the kitchen and actually, well, making something. It can get as bad as me plopping a meal in the microwave and being like, ‘Oh, yay, I cooked!’ when, to me, this isn’t cooking at all. I’ve begun collecting recipes that are so stupidly easy that, even on a tough day, I can fill my belly with something that makes up for the rest of those lousy hours. This pomegranate and lemon curd toast is super tangy, but also sweet, balancing each other out with a little of shredded sprouts. I hope this recipe inspires you to cook even on those lousy days!

Ingredients:


2 slices sourdough

Brummell & Browne

Lemon curd

Pomegranate arils

Alfalfa sprouts



Directions:


Toast the sourdough on a medium-high setting on your toaster. Spread enough Brummell & Browne on each slice. Spread lemon curd over the margarine. Sprinkle pomegranate arils on each slice, about two tablespoons on each slice. Hand tear about an eighth of a cup of alfalfa sprouts and top each slice with it. Consume immediately, or the toast will get too soggy. 



Serving suggestion:


Lemonade, chamomile tea, water.
